In 2007 we handpicked two hogs from Ballard Farm to create our first batch of artisan salami. Though our needs have grown exponentially, we remain committed to choosing animals with the same care and consideration as that first weekend visiting the farm.
We work hard to partner with farms dedicated to treating animals humanely. They are committed to allowing their animals to live a natural life, free to roam and forage.
We source our cheeses from the US and around the world. Each have a unique profile – taste, texture, color, origin – however, all use rBST free milk.
