Even then, we recommend that the sausage be cooked or frozen immediately upon receipt and that all safe handling guidelines be followed.

The salami is a shelf stable product and will stand up to non-refrigerated temperatures. However, we understand that our customers are looking for the highest possible quality and exposure to heat over time will diminish the quality of artisan salami. For that reason, during warm months we will only ship overnight express in our shipping coolers. Salami should be refrigerated immediately upon receipt particularly if warm or soft. The salami will become more firm in refrigeration.
